Shirvington Winemaker

In 1996 the Shirvington Family, purchased 16 hectares of prime land in Willunga, South Australia. After extensive researching and touring of Australia's major wine regions, this area was chosen for its ability to consistently produce outstanding table wines of great character and quality. Willunga is just south of McLaren Vale on the Fleurieu Peninsula, an area internationally renowned for its red wine, in particular Shiraz.

Working closely with a viticulturist and winemakers, the quality of fruit was such that the first commercial release, the 2001 Cabernet Sauvignon, was awarded Wine of the Year at the prestigious McLaren Vale Wine Show. This wine, coupled with the 2001 Shiraz, was the first to be selected by Dan Philips of The Grateful Palate, for distribution in the United States.

The palate is instantly rich and mouth filling with ripe cherry and blackcurrant fruit. Well structured with mocha and chocolate flavours and fine emery tannins. White pepper and cloves combine to give a lengthy, spicy finish.

The wine exhibits a deep, dense plum red colour. The intoxicating aromatics are evident as soon as the cork is pulled.


There is a concentrated array of wild blackberries and fruits of the forest, intermingled with freshly ground cinnamon and nutmeg. The palate is equally as rich with juicy, sweet fruit, evolving into a silky, creamy mid palate.

Owners Paul and Lynn Shirvington have replaced winemakers Sarah and Sparky Marquis with Kim Johnston, who appears to be following in the same footsteps, producing bigger than life, bold, rich, but beautifully linear and precise wines. Both of these cuvees are barrel-fermented and aged in 75-85% new oak, primarily American. The vines are young, which makes the quality even more remarkable.

The wine has a deep maroon red colour. The varietal nose is an intense display of wild blackcurrant and dark cherry, intermingled with freshly ground cinnamon, crème brulee and a fresh leafy lift. The palate is vibrant with sweet fruit, developing into a fleshy, creamy mid palate. Fine savoury tannins built into the wine give it structure and persistence with a raw silk feel. The wine is drinking well now and will cellar for many years.

This wine is deep maroon with perfumed aromas of dark chocolate and blackberry. There are also some hints of coffee and golden syrup. The palate is an intense explosion of sweet, luscious fruit and toasty oak, even so the texture is silky smooth and creamy and seems to glide over the tongue. Well balanced, the wine finishes with cinnamon and licorice that linger for some time.
