Adjusting the fruit at the crusher with tannins and acid and then the careful handling of the fruit throughout the ferment ensures for a wonderful wine at the finish. The ferment is finished in New French oak with an addition of Cabernet pressings, Cabernet and Petit Verdot made to the wine early to enable the marriage to be complete before it is ready for bottling.
Deep red core with lighter crimson edges. Ripe dark berry fruit complexity with cinnamon and savoury characters together with hints of chocolate and licorice. Earthy, dark berries with savoury and chocolate flavours typical of our Merlot. Soft ripe fruit fills the palate balanced by supporting oak and acidity giving great length of flavour together with sufficient tannin structure to ensure medium term cellaring potential.
