The wine exhibits a deep, dense plum red colour. The intoxicating aromatics are evident as soon as the cork is pulled.

There is a concentrated array of wild blackberries and fruits of the forest, intermingled with freshly ground cinnamon and nutmeg. The palate is equally as rich with juicy, sweet fruit, evolving into a silky, creamy mid palate.

95/100
The Wine Advocate
A gorgeous effort, the 2005 Cabernet Sauvignon screams blueberries, creme de cassis, licorice, cedar, and spice box. The oak component can not stand up to the lavish, extravagant amounts of fruit and glycerin. This intense, full-bodied, surprisingly pure and elegant Cabernet should last at least a decade.
WA, Robert Parker Jr. Issue: #167

89/100
Wine Spectator
Bright and lively, this pulses with blueberry and currant fruit that's nicely framed with refined tannins and enough acidity to keep it fresh.
WS, Harvey Steiman Issue: Jun 30 2007

Shirvington-Estate-Shiraz-2005-1.5L

The 2005 vintage is now showing deep red with a purple rim. The wine in its infancy still shows a lifted and perfumed nose with traces of red plum, blackcurrant and cracked red peppercorn.

The palate with all its freshness and luxurious, velvety tannins is so rich and concentrated, yet so reserved. It is a satisfying mixture of chocolate, aniseed and smoky oak. The copious layers are incredibly tightly bound and need time and careful cellaring to unleash the full potential of this wine.
